Meera Sodha's recipes are absolutely perfection. Her naan recipe, her golden garlic raita recipe, her chana masala recipe... all to die for!

I can take no credit for this following recipe (I did tweak it a little) but I will however accept all the compliments as my own when I serve it to my family.



This is a vegetarian meal that is incredibly filling and full of healthy ingredients.

Chana Masala

Ingredients:

  • 3 Tbsp oil

  • 2 14-ounce cans chickpeas

  • 3 cloves garlic, chopped

  • 11/4- inche piece of ginger, peeled and chopped

  • 1 fresh green jalapeno

  • 2 onions, sliced

  • 1 14-ounce can plum tomatoes

  • 1 Tbsp tomato paste

  • 1 tsp garam masala

  • 3/4 tsp ground cumin

  • 1/2 tsp chili powder

  • 1/4 tsp ground turmeric


Directions:


  • Rinse and drain the canned chickpeas.

  • Pound the ginger, garlic, and green jalapeno together in a mortar and pestle with a pinch of salt until they turn into a paste. (You can also put the ginger, garlic, and jalapeno into a food processor and buzz it up that way).

  • Put the oil into a large frying pan on medium heat. When it sizzles, add sliced onion and cook for 10-12 minutes until golden brown. Don't skimp on the time and stir frequently. When the onions have browned, add the ginger, garlic, jalapeno paste and stir through. Add the tomatoes, crushing them right away. Add tomato paste, stir well and cook for 10 minutes, or until it has become a rich, thick sauce.

  • Add the garam masala, cumin, chili powder, and turmeric and cook for a couple of minutes before adding the chickpeas. Check the consistency and add around 5 Tbsp of water if the sauce is too thick. Stir well and cook for another 5 minutes. Taste and adjust any seasoning as you require.

  • Serve with naan, rice, or baked fries seasoned with cumin and chili powder. Sodha's golden garlic raita is also an incredible topping to this chana masala.
