Dutch baby pancakes cure the blues

My kiddos woke up feeling pretty blue so I popped one of these beauties in the oven. It takes about 5 mins to prep and only 20 mins in the oven. The melted butter, drizzle of lemon juice and sprinkle of powdered sugar had those whiney blues cured within minutes.
This recipe is adapted from the woman who made me love cooking, the one and only Martha Stewart. I hate putting sugar into breakfast foods, so there is only a tablespoon instead of 1/4 cup.
1/2 cup flour
3/4 cup milk (can use almond I'm assuming but have never tried it before)
1 Tbsp sugar
1/4 tsp salt
1/2 tsp vanilla
3 Tbsp butter
1 Tbsp lemon juice
powdered sugar for serving
Preheat oven to 425 degrees F.
Melt butter in either a skillet or pie plate.
In Blender combine eggs, flour, milk, sugar, salt, and vanilla. Blend for 1 minute until batter is foamy.
Pour batter into skillet with melted butter.
Bake 20 minutes, until pancake is very fluffy and browned.
When you take it out of the oven it will be super puffed up, work quickly and top pancake with butter, lemon juice, and powdered sugar. Eat immediately!!
