Easy Pho

Hosting pho parties are probably my favorite party to host because they are cheap and delicious. I make a huge pot of broth, supply the noodles, and everyone else brings the toppings. The first pho party I threw put me on my husbands radar and now every time we make it we reminisce over those intense new relationship emotions. Pho is pretty magical.

Brothy soups are wonderful for cold evenings, especially when they are full of fresh greenery. Now that it is the holidays, AKA "beige food season", the greener the food the better. Add this Pho to your holiday food rotation and everyone will be thanking you and complimenting you on the deliciousness.

Easy Phò - serves 4 Ingredients:

  • 1 yellow onion

  • 1 bulb garlic

  • 1 4 inch ginger root

  • 2 whole star anise pods

  • 4 whole cloves

  • 6 cups beef broth

  • 1 NY strip steak sliced thinly

  • 1 package Rice noodles/sticks

For Serving:

  • Mint

  • Basil (thai basil if available, if not regular basil will do)

  • Cilantro

  • Limes

  • Jalapeno slices

  • Mushrooms

  • Bean sprouts (optional)

  • Sriracha


  • Cut ginger root in half lengthwise, cross cut garlic bulb in half so cloves are exposed, then cut onion in half. Place on a cookie sheet with exposed sides upwards. Broil for 10 minutes until lightly charred.

  • Place charbroiled garlic, ginger, and onion into large stock pot. Add 6 cups beef broth, star anise and cloves into pot. Bring to boil, then lower to a gentle simmer and simmer for 30 minutes.

  • While broth simmers, cut up mint, basil, cilantro, jalapeno, limes, mushrooms. Set aside.

  • In a separate pot, cook rice noodles according to package instructions. Once cooked, be sure to run cold water on them so they stop cooking and do not get squishy.

  • Take NY strip steak and slice extremely thin, against the grain. (You might need to place steak in freezer for a few minutes in order to slice very thinly.)

  • Remove garlic bulb, ginger root, onion, star anise & cloves from the broth with a slotted spoon. Bring broth back to boil, and then add thinly sliced steak to broth. Steak should cook within seconds.

  • divide rice noodles into bowls, add broth, then top with desired toppings. Enjoy!
