Greek-style pasta salad

This greek-style pasta salad tastes fresh and summery. It has all the comfort greek salads bring, plus elbow macaroni which in and of itself is the epitome of comfort.

It can be used as a side, a quick healthy lunch, or as the pasta salad at a pot-luck that disappears within in minutes. It is very versatile too. You can add pepperoncini. You can omit the pasta if you are gluten free or just want a bowl of delicious fresh veggies. You're the one in the kitchen, so you decide.

This recipe only makes enough for 4 people. (Or 2 very very hungry adults who didn't eat breakfast)


1/2 lb macaroni noodles, cooked

1 english cucumber, sliced

1/4 cup sliced #mezzetta kalamata olives

1/2 cup cherry tomatoes, halved

1/2 red pepper, diced

4 oz. feta cheese crumbles

4 green onions chopped

1/2 cup Lydia's Favorite Dressing


Place all the ingredients in a large mixing bowl, toss with salad dressing.

Serve with extra olives and whole pepperoncini if you are feeling fancy.
