One of my biggest pet peeves about food blogs are the lengthy stories behind every recipe. As a stay at home mom of 4 year old twins I have very little time to read pages and pages of life stories. I love other people's life stories, I really do, but I also love finding recipes quickly. So no long stories here. If I find the need to share some life story moments, I will do so separately, with no recipes attached. :)
1/2 of a mango, thinly sliced
1/2 cup shredded cheddar cheese
1/4 cup cilantro leaves
4 flour tortillas
Place the tortillas on a work surface and spread the tiniest, thinest layer of mayo on the inside. Put the mango, cilantro, and cheese on the tortillas. Fold tortillas in half.
Heat up some olive oil (or butter) on medium heat, in a non-stick skillet. When the olive oil starts to shimmer place folded quesadillas on the skillet and cook for a couple minutes. When bottom is starting to brown, flip over and brown the other side.
Remove quesadilla from pan, cut in half and serve with avocados, pico, or salsa.
I have to give credit for these delicious quesadillas to my sister Becca. All my sisters (I've got 3 of them) are phenomenal cooks, and each one has their very own culinary style. Now that we are all older and have families of our own, it has been really fun sharing our discoveries in the kitchen.
