Thai Lettuce Wraps

My sister Becca introduced me to these wonderfully healthy lettuce wraps while camping in the pacific northwest. They are a perfect appetizer, a healthy snack, and a good way to use up left over chicken. This is my take on her thai lettuce wraps, but I owe the inspiration to her. Here's to you, Beck!


Ingredients:

Peanut Sauce:

1/2 cup creamy peanut butter

2 Tbsp amino acids

1/2 lime, juiced

2 Tbsp coconut milk

1/4 tsp cayenne


Toppings:

8 medium romaine lettuce leaves

1 cooked chicken breast, shredded

1/2 jalapeno, sliced thinly

cilantro, for garnish

red onion slices, for garnish

crushed peanuts, for garnish


Directions:

  • Place all the peanut sauce ingredients into a bowl and mix until combined. Don't over mix because the peanut butter will become too weird and sticky.

  • Lay the romaine lettuce leaves out on a plate and put a good slathering of peanut sauce on each leaf. Then top with shredded chicken, sliced red onions, cilantro, jalapeno slices, and crushed peanuts.

  • Eat! It's so good my friends.
