Whole Wheat + Flax Pancake Mix

A pancake mix that is quick, easy, healthy, and delicious. It is twin toddler approved and might last you all week. I use Bob's Red Mill because they are my favorite.

Pancake Mix Recipe:

1/2 c. ground flax seeds

2 c. all purpose flour

2 c. whole wheat pastry flour

3 T. baking powder

2 tsp. baking soda

1 tsp. salt


You can put in a plastic or glass container and store pancake mix in the fridge (flax seed should be stored fridge)

When you are ready to make pancakes add the following to a mixing bowl and whisk together:


1 c. pancake mix

1 egg

3/4 c. milk

1 T. oil (melted coconut or sunflower)


If you are making waffles use:

1 c. pancake mix

2 eggs

3/4 c. milk

2 T. oil


Fry up in butter (unless you are making waffles then use a waffle maker).

Top with real maple syrup or any of your favorite toppings.
